Behind the Scenes

Today, on my day off, I went up into the galley of the Africa Mercy to take a couple pictures of the volunteers.  The the teams in the galley are set up just like the dining hall, two days o, two days off and then every other weekend.  Each galley team works closely with their corresponding dining hall team.

The galley is responsible for all the food preparation.  They clean and cut up all the fresh vegetables for salads and the fresh fruit for the crew’s enjoyment. 

They also prepare all the hot foods (like tonights dinner of chicken).  All the food comes in raw from the local markets or frozen from the shipping containers. 

 Everything that the galley does is behind the scenes.  These volunteers are the invisible crew that helps everything to run smoothly on board the Africa Mercy.  Without them, we would be hungry and extremely tired of peanut butter (no bread, since the galley crew makes that from scratch also).

I am proud to work along side these amazing individuals.

      Currently, I am employed with AmeriCorps NCCC and I have no personal desire to write full time or settle down any time soon.
